Kiveve: Paraguay Dessert

What is it?

Kivevé is one of the most popular semisweet dishes of Paraguay. It is loved by everybody and is very tasteful
It is a thick cream with very high energetic value and that can be used as a vegetable in the main course or as a dessert.
Kivevé takes its name for the red color it develops because the pumpkin they use gives this color to the dish: Andaí.

Recipe

Ingredients:

1 red pumpkin (andaí)
1 finely chopped onion
1 cup of milk
½ teaspoon salt
1 cup of sugar
1 cup of corn flour
½ half pound cream cheese
Oil
Water

Preparation:

Fry until golden the onion in the oil. Pass through the blender the pumpkin, with the milk, the sugar, salt, the corn flour. Add this to the onion in the pan with the oil. It must cook for some 8 minutes. Then add the cream cheese and cook this for two more minutes, stirring all the time.
As a dessert, it is delicious very cold. And you can add to this dessert dish some vanilla cookies.
