Torta de Zapallo: Dessert from Ecuador
Recipe:
Because Ecuadorians love desserts, they do them very sweet and with
incredible ingredients, and they end up being something exquisite!
Ingredients:
2 pounds pumpkin pieces, cut in cubes, (it can be any yellow pumpkin)
¾ cups milk cream
1 ¼ cup raisins
1 teaspoon cinnamon
3 tablespoons butter
1 1/3 cup of sugar
1 cup of rum
4 well beaten eggs
Preparation:
Cook the pumpkin until tender, some 20 minutes. Take all the water
from them, then mash them well, add the cinnamon, the sugar the cream
and half the butter. Take it to the fire again so that the sugar dissolves
completely and the mixture gets firm. Let it cool well before adding
the other ingredients, the raisins and the eggs. With the extra butter,
(the spoon and a half) butter the oven dish and then put the pumpkin
mixture in it. Put it into a moderate heat oven for an hour and ten
minutes, or until it is golden on top. When it is taken out from the
oven, pour the rum over it. You can add either whipped cream when
serving it or dulce de leche on top of it.
