Potato Rolls, Breads from Peru
It is well known that potatoes were originated in Peru and that in that
country they have thousands of ways to prepare potatoes, always in exquisite
dishes.
Today we have a bread recipe, prepared with potatoes!
Recipe:
Ingredients:
1 ¾ cups of warm water
2 tablespoons dry yeast
2 teaspoons of sugar
1 ½ cups of mashed potatoes
½ cup of sugar
2/3 cup of margarine
2 teaspoons of salt
8 cups of flour
Preparation:
In a bowl put the warm water, add the 2 teaspoons of sugar, then
the dry yeast and let it get dissolved there. Let it stand untouched
in the bowl until little bubbles are formed. Don’t move the
bowl until then. This takes some 15 minutes. In that moment add the
flour and start mixing it with the yeast part and with the mashed
potatoes. In a floured table knead this until it is elastic and soft.
Let it rest for an hour, covered so that it won’t loose its
warmth and so that it will grow.
Knead it again in a soft way, form the little balls and put them in
a greased baking sheet, letting them, stand there until they double
their size.
Take them to a medium heat oven, bake them for some 15 minutes or
until they are golden on top. Really, a treat!
