PICARONES, DESSERT FROM PERU
Recipe of Picarones Dessert from Peru
Recipe:
2 tablespoons of dry yeast
¾ cup of warm water
¼ teaspoon salt
4 tablespoons sugar
1 beaten egg
1 pound boiled and mashed pumpkin
3 ½ cups flour
Oil
Maple syrup, or chocolate syrup
Preparation:
Put the warm water in a bowl, and sprinkle over it the yeast. Wait
a few minutes without moving the bowl, until the yeast starts to make
bubbles. Then add the salt, sugar and the mashed pumpkin, and mix
well.
Add the flour and start kneading as soon as it is to difficult to
move it with the wooden spoon. Knead it over a board until it doesn’t
stick to your hands (if you need a little extra flour, you can use
it), then oil this dough on the outside, put it in an oiled bowl and
cover it and let it stand until it doubles its size.
Take then small parts of it and make long strips and make circles
with then as if they were doughnuts. Fry them in very hot oil until
they are golden on each side, turning them so they get cooked evenly.
After draining them on paper towels, serve them hot with maple syrup
or chocolate syrup over them. They are delicious to be served with
the coffee!
