Manjar Blanco: Dessert from Bolivia

Recipe

This is one of the most typical desserts from Bolivia.

Ingredients:

½ cup of rice
2 liters milk
2 teaspoons of cinnamon
1/5 teaspoon of soda bicarbonate
2 cups of sugar
1 teaspoon vanilla

Preparation:

The rice should be carefully washed and let it be naturally dried. Then put it into the blender until it becomes a flour.
In a pan, put the milk, the rice flour, the cinnamon, the bicarbonate and the sugar. Take it to a boil, stirring it continuously with a wooden spoon. When it starts to boil, lower the fire to the minimum.
It should be boiled until it gets thicker, and will be ready when you can see the end of the pan when you stir with the wooden spoon.
This dessert, almost a marmalade, is delicious to be served cold with vanilla biscuits, or can be used to fill cakes or adding it to a pudding, or just spread on a loaf of bread.
