Guyanese Dandee Cake
1 cup cake flour
1 cup sugar
1 cup butter
2 teaspoons baking powder
¼ teaspoon salt
1 cup chopped nuts
2 cups dried fruit
Grated rind of 1 lemon
Beat thoroughly the butter with the sugar until it is very creamy.
Add the eggs by one, beating all the time.
Fold in the flour mixed previously with the baking powder, adding
the fruits and ¾ of the chopped nuts, and the lemon rind.
Pour the mixture into a greased pan lined with greased paper.
Over the dough sprinkle the ¼ cup of chopped nuts.
Bake it on moderate oven for 70 minutes or until it is golden on top.
It can be served with whipped cream topping. A glass of white wine
and it’s a great ending for any delicious dinner.
