Candied Sweet Potatoes from Guyana
Recipe
Ingredients:
5 sweet potatoes (medium size)
2 tablespoons butter
¾ cup of sugar
¼ cup water
1 teaspoon cinnamon
Preparation:
Cut the sweet potatoes in squares of two inches/side. Take it to
a boil in water with ¼ teaspoon salt. In 15 minutes, they should
be done, if you can try them with the fork and it enters easily into
the vegetable.
Take them carefully from the water and put them to drain.
Meanwhile prepare syrup (caramel) with sugar and the water. Once it
is golden color it is ready. Put the sweet potatoes into a serving
dish, pour over them the syrup and sprinkle over the cinnamon.
