Bojo: Dessert from Surinam
Bojo
Surinam recipes are all a mixture of recipes of many countries of
the World. Its main dishes are mostly coming from the ethnic heritage,
that is, Creole, European, Chinese, Indonesian, Indian, American.
This creates a diversity of dishes but mainly based on chicken and
rice, and different sauces. As for desserts they have outstanding
ice creams, and we have found this typical recipe from them, whose
origin is of Surinamese extraction.
Recipe:
Ingredients:
2 pounds manioc (yucca)
3 eggs
4 teaspoons of cinnamon
2 teaspoons vanilla
1 cup sugar
¼ cup butter
¼ teaspoon salt
1 ½ cups of milk
1 cup of raisins
1 coconut
Preparation:
Peel and grate the yucca and peel and grate the coconut
Beat the butter and the sugar until it is very creamy, add the vanilla.
Add by one the eggs, beating all the time. Once they are all in the
dough continue beating for 3 minutes. Then add the grated manioc and
the grated coconut and the salt. Add the milk, the raisins and ¾
of the cinnamon.
Put this mixture on a greased baking dish, sprinkle it with the ¼
cinnamon left and take it to a moderate heat oven for one hour. It
must be golden on top and not dry in the inside.
